Maple Garlic Potatoes

Maple garlic potatoes are an excellent, quick, and delectable side dish. Served with a Sunday night roast or as a side dish for the holidays. Easy to prepare in advance and just requires one pan.

Ingredients

  • 1 tablespoons avocado oil
  • 3 tablespoons finely chopped garlic
  • 2 pounds baby potatoes scrubbed
  • 1 teaspoon salt
  • 1/4 teaspoon red chili flakes/cayenne pepper
  • 2 tablespoons maple syrup
  • 2 tablespoons chopped cilantro

Instructions

  • In a large pot, bring water to a boil on medium heat.
  • Add baby potatoes and cook until tender, about 20 minutes.
  • Drain potatoes, rinse with cold water, and remove skin and set aside.
  • In a separate pan, heat oil on medium, and add garlic.
  • Fry garlic until lightly golden, stir in boiled baby potatoes
  • Cook potatoes until they are a bit golden, about 6 minutes.
  • Now add in salt and red chili flakes.
  • Mix it all up, and add maple syrup
  • Give it a good mix and add in chopped cilantro.
  • Serve warm.
