In a large pot, bring water to a boil on medium heat.
Add baby potatoes and cook until tender, about 20 minutes.
Drain potatoes, rinse with cold water, and remove skin and set aside.
In a separate pan, heat oil on medium, and add garlic.
Fry garlic until lightly golden, stir in boiled baby potatoes
Cook potatoes until they are a bit golden, about 6 minutes.
Now add in salt and red chili flakes.
Mix it all up, and add maple syrup
Give it a good mix and add in chopped cilantro.
Serve warm.
