Mashed White Sweet Potatoes

These creamy  Mashed White Sweet Potatoes (mashed Boniato), are fluffy, sweet, and flavorful, the perfect side dish for weeknight dinner or a holiday meal. Sweet Potato boiled until tender, mashed with vegan butter and roasted garlic will definitely be a family favorite.

  • 1 large saucepan

Ingredients

  • 2 pounds sweet potatoes
  • 2 tablespoons Vegan Butter
  • 1 head roasted garlic
  • 1/4 cup non-dairy milk unsweetened (I used coconut milk)
  • 1/2 teaspoon salt or to taste

Instructions

  • Scrub sweet potatoes and peel with a sharp knife, cut potato into large chunks.
  • Place chunks into a large pot with cold water to cover sweet potatoes and bring to boil on high heat.
  • Reduce heat to simmer, cover the pot and cook for about 20 minutes or until sweet potatoes are tender and soft
  • Remove from the heat and drain liquid using a colander.
  • Transfer sweet potatoes to a bowl, add vegan butter, roasted garlic, non-dairy milk and salt to taste.
  • Mash potatoes until smooth and creamy using a potato masher or a fork.
  • Garnish with green onions and serve immediately.
