Mixed Vegetable Masala

It’s very soothing too! Mixed Vegetable Masala is one of my favorite dishes which is frequently prepared at my home.

Equipment

Ingredients

  • 1/2 cup potato cubes
  • 1 cup mixed vegetables
  • 1/2 cup tomato puree
  • 5 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1 tablespoon avocado oil
  • 1 small onion chopped
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon Cayenne pepper
  • handful of cilantro leaves chopped

Instructions

  • In a pan, heat oil, add cumin, ginger, garlic, and chopped onion, and cook until soft. Add mixed veggies and potatoes, cover, and cook for 5 minutes or until half cooked.
  • Add salt, turmeric, and red chili powder, cook until fragrant, then add tomato puree, and cook until oil separates.
  • Again, cover and cook for 5 to 8 minutes (at low heat) or until veggies get tender; no need to add water. Garnish with fresh coriander leaves.
