Ingredients

  • 2 tablespoons avocado oil
  • 1 medium onion chopped
  • 5 cloves garlic minced
  • 1 tablespoon ginger ginger
  • 1 tablespoon garam masala or curry powder
  • 1 teaspoon turmeric powder
  • 1 medium potato scrubbed and chopped
  • 1 medium carrot peeled and diced
  • 1 cinnamon stick
  • 5 green cardamom
  • 2 vegan bouillon
  • 1/4 cup cilantro chopped
  • 1/4 teaspoon cayenne
  • 4 cups water
  • 2 cups long grain brown rice

Instructions

  • Heat oil in a large pot over medium-high heat, add onion, and cook until soft, about 3 minutes.
  • Stir in garlic, ginger, garam masala, turmeric and cook until fragrant, 2 minutes.
  • Add potato, carrot, cinnamon stick, cardamom, bouillon cubes, and water.
  • Cook for 7 minutes.
  • Add rice, stir to combine. Bring to a boil, cover the pot and reduce to the lowest heat and simmer until water has evaporated and rice is tender, about 50-60 minutes.
