  • 4 leeks
  • 2 tablespoons olive oil
  • 1 teaspoon nutritional yeast flakes
  • 1 teaspoon sea salt
  • 2 tablespoons vegan Parmesan

Instructions

  • Trim leeks, discard the roots and cut them into half lengthwise. Wash them thoroughly to get rid of the dirt. Pat the leeks dry using a kitchen towel.
  • Place the leeks in a bowl and add olive oil, salt, black pepper, and nutritional yeast. Mix well to coat the leeks on all sides.
  • Line a baking tray with parchment paper and place leeks on it. Place the baking tray in a preheated oven at 400℉ for 30 minutes.
  • Take the baking tray out of the oven and sprinkle with vegan parmesan cheese.
  • Place the leeks back in the oven and roast for 10 more minutes. Once the edges turn golden brown, remove from the oven and serve.
