Add 1 tablespoon of soy sauce or tamari (for a gluten-free version) to the bowl with lemon juice.
Mince 1 clove of garlic and add it to the bowl.
Pour 1 tablespoon of maple syrup into the bowl for sweetness.
Add 1 tablespoon of roasted sesame oil to the dressing.
Grate 1 teaspoon of fresh ginger and mix it into the dressing.
Sprinkle a pinch of cayenne pepper into the bowl for a bit of heat.
Pour the dressing over the smashed cucumbers and chopped onion. Toss everything to coat well.
