Meanwhile, prepare the orange sauce. In a small saucepan, whisk together the orange juice, maple syrup, soy sauce, cornstarch, sesame oil, grated ginger, and sesame seeds until smooth.
Cook the orange sauce over medium-high heat, whisking constantly until it thickens and starts to bubble, about 2-3 minutes.
Pour the orange sauce over the mixed vegetables and stir well to coat.
