  • 4 cups mixed vegetables cabbage, cauliflower, zucchini, radish, carrots, bell peppers, french beans, chopped
  • 2 tablespoons avocado oil
  • 3 cloves garlic chopped
  • 1 medium onion chopped
  • 1 teaspoon paprika
  • 1/4 teaspoon salt

For The Orange Sauce

  • 1 cup orange juice
  • 1/4 cup maple syrup
  • 2 tablespoons soy sauce
  • 2 teaspoons cornstarch
  • 1 teaspoon sesame oil
  • 1 teaspoon fresh ginger grated
  • 1 teaspoon sesame seeds
  • 1 green onion chopped

Instructions

  • In a large skillet or wok, heat the avocado oil over medium-high heat.
  • Add the garlic and onion, and sauté until the onion is translucent and fragrant about 2-3 minutes.
  • Add the mixed vegetables to the skillet and stir-fry for 3-4 minutes until the vegetables are slightly softened but still crunchy.
  • Sprinkle the paprika and salt over the vegetables, and stir well to combine.
  • Reduce the heat to medium-low and let the vegetables cook for another 2-3 minutes until they are tender but still retain their crunch.
  • Meanwhile, prepare the orange sauce. In a small saucepan, whisk together the orange juice, maple syrup, soy sauce, cornstarch, sesame oil, grated ginger, and sesame seeds until smooth.
  • Cook the orange sauce over medium-high heat, whisking constantly until it thickens and starts to bubble, about 2-3 minutes.
  • Pour the orange sauce over the mixed vegetables and stir well to coat.
  • Serve the mixed vegetables in orange sauce hot with your favorite side dishes such as rice or noodles. Enjoy!
