Lotus Root

  • 8 ounces lotus root (about 1 medium root)
  • 1-2 tablespoons sesame oil
  • 2 cloves garlic chopped
  • 1 teaspoon fresh ginger grated
  • 1/4 cup red bell pepper
  • 2 green onions chopped extra for garnishing
  • 1/4 teaspoon Cayenne pepper
  • 1 teaspoon sesame seeds for garnishing (optional)

To Cook The Lotus Roots

  • Prepare the lotus roots. Wash the lotus root, trim the ends, and then peel. Cut it into thin, beautiful slices and set them aside in a bowl of cold water for 10 minutes..
  • Prepare all the veggies, including bell pepper, garlic, ginger, and green onion, and set aside.
  • Combine the sauce ingredients in a bowl: vegetable broth, maple syrup, and Bragg's Liquid Aminos. Set aside
  • Heat oil in a large skillet on medium-high heat. Add the lotus root slices in a single layer and saute on each side until they turn a gorgeous golden brown; repeat until all slices are done. The sight of these golden brown slices is a feast for the eyes. Set them aside on a plate.
  • Add garlic, ginger, green onions, bell pepper, and saute until fragrant.
  • Stir in lotus root slices and prepared sauce and cook until the sauce is thickened. Add cayenne pepper and garnish with sesame seeds and the remaining green onion.
