Ingredients

  • 2 cups brown rice cooked
  • 1 tablespoon olive oil divided
  • ½ cup onion chopped
  • 1 teaspoon garlic minced
  • 1 cup mixed veggies
  • 2 tablespoons raisins
  • 1 tablespoon soy sauce
  • 2 green onions chopped and divided
  • Salt or to taste
  • 1 tablespoon sesame seeds

Instructions

  • Heat 2 teaspoons of olive oil in a saucepan, add onions, and cook until soft, about 3 minutes.
  • Stir in garlic and cook for one minute.
  • Add mixed vegetables and raisins and stir to coat.
  • Stir in the rice.
  • Mix soy sauce, the remaining teaspoon of olive oil, and green onion in a bowl with a pinch of salt.
  • Add to the rice and vegetables and stir constantly for 2 minutes.
  • Garnish with remaining green onion and sesame seeds.
