Ingredients

  • 2 pounds tamarind pods
  • 1 1/2 cups organic cane sugar or I used coconut sugar
  • 1/2 cup organic cane sugar for rolling or coconut sugar

Instructions

  • Crack the tamarind pods by applying pressure on them with your fingers. Remove the stalk and take out the pulp.
  • Squeeze the pulp to eliminate any shell pieces or seeds within the pulp.
  • Next, add 1 ½ cup of coconut sugar and mix well using your hands until it gets stiff. It might take some time to combine the two ingredients.
  • Divide the mixture into 24 equal pieces.
  • Roll each portion between the palms of your hands until it forms a ball.
  • Roll each ball in coconut sugar until it is coated well.
  • Store in an air-tight jar.
