  • 1 cup cooked chickpeas drained
  • 1 cup cooked kidney beans drained
  • 1 cup cooked black-eyed peas drained
  • 1 cup corn kernels
  • 1/2 cup onion finely chopped
  • 1 medium tomato diced
  • 1 medium bell pepper diced
  • 1/2 cup cilantro leaves chopped

Dressing

Instructions

  • In a bowl add all the beans and veggies.
  • Feel free to add any greens of your choice.
  • Prepare the dressing, combine olive oil, lemon juice, maple syrup, and salt in a bowl, mix well and pour over the salad. Toss to combine and serve!
