If you are using extra-firm tofu, press water from tofu by wrapping it in a clean dishtowel or paper towel.
Place wrapped tofu on a plate and top with a heavy object like a pot or books for about 20 minutes.
Remove the cloth and transfer tofu unto a cutting board.
Preheat oven 400 degrees F. Prepare a baking sheet by lining it with parchment paper and lightly spraying it with cooking oil.
Combine marinade ingredients in a bowl, Bragg's Liquid Aminos, maple syrup, nutritional yeast flakes, sesame oil, smoked paprika, onion powder, garlic powder, liquid smoke. Mix well.
Cut tofu into thin slices about 1/8 inch thickness. Dip tofu into the marinade and place on the baking sheet.
Bake for 20 minutes, turn over slices, and bake for another 20 minutes or until tofu slices are beginning to crisp on the edges.
heat 1 tablespoon oil in a large non-stick skillet over medium-high heat. Add tofu slices and cook until edges are golden brown.
Flip tofu over and cook until the other side is brown. Make sure to keep on eye on the tofu slices so they won't burn.
The slices will continue to crisp up as they cool. Serve as a sandwich, 2 slices of tofu bacon with hummus, tomato, avocado.
