Place vegan yogurt in a large bowl. Add oil, garlic, ground paprika, turmeric, cumin, coriander, salt, and mix until smooth.
Add tofu, onion, bell pepper, and zucchini, and marinate in the refrigerator for 30 minutes.
Place marinated tofu and vegetable cubes on skewers.
Heat oil in a large skillet over medium-high and cook until tofu/vegetable skewers are golden brown, turning skewers every minute for about 15 minutes.
In the Air Fryer - preheat the air fryer to 400 degrees F. Place tofu/vegetable skewers on an air fryer tray lined with parchment paper and cook for 20 minutes until golden brown, turning halfway.
In the oven - Preheat oven to 425 degrees F. Add the tofu/vegetable skewers to a prepared baking sheet and bake for 25-30 minutes.
