Turmeric Potato Rice (Tahiri Recipe)

Ingredients

  • 2 cups long-grain rice washed and soaked
  • 2 tablespoons avocado oil
  • 1 medium potato peeled and chopped
  • 1 medium onion sliced
  • 1 medium tomato chopped
  • 2 chili peppers (optional)
  • 1/2 teaspoon ground paprika
  • 1 teaspoon turmeric powder
  • 1 teaspoon roasted cumin seeds
  • 1 1/2 teaspoons salt

Instructions

  • Rice should be rinsed, washed, and soaked for about 20 minutes in water before cooking.
  • Heat oil in a pan and add onions, tomatoes, and green chilies.
  • Fry them for about two to four minutes until the tomatoes are a bit soft!
  • Add in the potatoes and fry for another 3 - 4 minutes.
  • Add in all the spices in the fried veggies and give them a good mix.
  • You'll add water according to the amount of soaked rice, so if you've soaked one cup of rice, you'll add two cups of water.
  • 2, one part rice and two parts water!
  • When the water comes to a boil, add in the rice and let them simmer on medium flame.
  • Until the water has almost evaporated, put the lid on.
  • Keep the rice on the dam for about 10 minutes or until the rice is done on low flame.
  • After the rice is done, serve them with some vegan yogurt!
