There are many ways to make this dish, but this ugali recipe is made from coarsely ground cornmeal into mush that is served as a side dish. This hearty side dish is a popular meal in Africa, particularly sub-Saharan Africa, and is usually served with a rich and flavorful stew.

Ingredients

  • 3 cups water
  • 1 1/2 cup coarse cornmeal
  • 1/2 teaspoon salt optional
  • 1 tablespoon Vegan Butter optional

Instructions

  • Bring water to boil in a saucepan over medium-high.
  • Slowly pour cornmeal while stirring constantly with a whisk until the cornmeal is lump-free and starts to thicken. Then keep stirring with a large wooden spoon vigorously.
  • Cover the pot, reduce heat and allow the ugali to cook, stirring occasionally while forming into a ball and pressing the ugali on the sides of the pot with the wooden spoon for 7-10 minutes.
  • Spoon ugali in a bowl and press down. Invert bowl on a plate and serve ugali with your favorite stew.
