Ingredients

  • 1 pound green beans trimmed
  • 2 tablespoons olive oil
  • 2 tablespoons organic sugar (I used Sugar In The Raw)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 12 slices Air Fryer Eggplant Bacon

Instructions

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Spray or brush with oil. Set aside.
  • Bring water to a boil in a large pot. Add green beans and cook for about 2 minutes or until tender.
  • Drain green beans using a colander, rinse with cold water to stop the cooking process. Dry green beans with a clean towel or paper towel and transfer to a large bowl.
  • Combine olive oil, sugar, garlic powder, Italian seasoning, and salt in a small bowl. Toss with green beans.
  • Place the seasoned green beans on the prepared baking sheet. Bake for 20-25 minutes or until the edges are slightly golden and crispy. Allow to cool enough to handle.
  • Take about 6 green beans in a bundle, roll a slice of eggplant bacon around the middle of the bundle. Tuck the end of the eggplant beneath the other end, turn the side with the seam down, or secure with a toothpick and place on a serving platter. Repeat with the remaining green beans
  • Serve immediately or reheat in the oven for 5 minutes.
