Vegan Banana Ice Cream

Banana ice cream is so delicious and easy to prepare! All you need is one simple ingredient you probably already have on hand - frozen ripe bananas and the best part is, no ice cream maker is needed. The riper the banana, the sweeter your ice cream will be.

  • 2 large bananas
  • non-dairy milk optional

Instructions

  • Peel and cut the bananas into two-inch slices
  • Place bananas in the freezer in a freezer-safe container bag overnight.
  • Remove the bananas from the freezer the following day and allow them to thaw for 5-10 minutes.
  • Place them in a food processor or high-speed blender and process until smooth.
  • If you are using a blender, add a little soy or almond milk to start the process. Scrape down the sides of the blender, and there you have your soft-serve ice cream, ready to eat!
  • Eat it as is or customize it using nuts (such as walnuts—Walnut Banana Ice Cream), fruits (strawberries, blueberries, mangoes, or pineapples), dried fruits (cranberries, raisins), carob or cacao nibs (if you are going for a chocolate flavor, you could add some carob while blending), or carob or cacao nibs. There are so many variations to choose from!
