  • 2 medium ripe bananas mashed
  • 1 1/2 cups non-dairy milk almond, soy, or coconut (divided)
  • 2 tablespoons maple syrup stevia, agave or cane sugar
  • 1 teaspoon vanilla
  • 2 tablespoons cornstarch
  • Pinch of salt
  • Pinch of turmeric

Instructions

  • In a medium-sized pot over low flame, mix banana, sweetener, other ingredients, and one cup of non-dairy milk. Mix the 1/2 cup milk that remains with the cornstarch.
  • Add the cornstarch mixture to the banana pudding mixture, stirring constantly until the pudding thickens.
  • Stir in vanilla and salt and remove from the heat. Serve hot or cold; the pudding will thicken as it cools.
