Heat 1 tablespoon of oil in a large saucepan over medium-high heat. Add sausage slices and cook until brown and crispy on each side, about 4 minutes. Remove sausage and set aside.
Add the remaining tablespoon of oil, add onion, garlic, celery, and thyme, and cook until onion is soft about 3 minutes.
Stir in carrots, potatoes, cabbage, Italian seasoning, and Creole seasoning to coat, keep stirring until cabbage is wilted. Add vegetable broth and continue to stir.
Bring to a boil, cover saucepan and reduce to simmer for 15 minutes, add sausage and salt to taste, cook for about 3 minutes.
