Ingredients

  • 4 cups collard greens chopped
  • 4 cups cabbage chopped
  • 2 tablespoons avocado oil
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 1/2 medium red bell pepper chopped
  • 1/2 teaspoon Creole Seaoning
  • 2 vegan bouillon cubes
  • 2 tablespoons water

Instructions

  • Heat oil in a large saucepan over medium-high, add onion, and cook until soft, about 2 minutes.
  • Stir in bell pepper and garlic and cook for 1 minute. Add bouillon cube, Creole seasoning, and 2 tablespoons of water.
  • Add the collard greens and stir to wilt. Cover the saucepan and cook for about 5 minutes.
  • Add the cabbage and stir to coat. Add the remaining water. Cover the saucepan and cook for about 10 minutes. Add extra water if needed.
