These delicious Vegan Corn Fritters are a delightful treat. They are baked crisp on the outside and moist on the inside. They are made with organic sweet corn, gluten-free all purpose flour, spring onions, and lots of flavors!

Ingredients

  • 1 cups sweet corn kernels organic, fresh or frozen
  • 1 cup all purpose gluten-free flour
  • 1 tablespoon nutritional yeast flakes (optional)
  • 1 tablespoon garbanzo flour (optional)
  • 1 teaspoon baking powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/4 teaspoon Cayenne pepper
  • 1 cup water or more as needed
  • 2 cloves garlic minced
  • 2 spring onions chopped
  • Avocado oil for frying optional

Instructions

Method For Baking

  • Preheat oven to 400 degrees F. Line baking sheet with oiled parchment paper.
  • In a large bowl, combine gluten-free flour, nutritional yeast flakes, garbanzo flour, baking powder, cumin, salt and cayenne.
  • Stir in water (to form a thick batter like a pancake batter), spring onion, garlic, and corn.
  • Mix well and drop on prepared baking sheets. Brush or spray with oil. Bake for 30 minutes. turning halfway!

Method For Pan Frying

  • Combine gluten-free flour, nutritional yeast flakes, baking powder, cumin, salt, and cayenne in a large bowl.
  • Stir in water (to form a thick batter like a pancake batter), spring onion, garlic, and corn.
  • Heat oil in a large skillet over medium-high heat, add 2 tablespoons spoonful of the batter to the skillet. Spread the batter into a round circle and cook for about 3 minutes. Flip the corn fritters and cook for another 3 minutes or until golden brown.
  • Transfer the corn fritters to a plate that is lined with a paper towel and repeat cooking the remaining batter until the batter is used up. Add extra oil as needed.
