Ingredients

  • 3 cups almond milk
  • 1 star anise
  • 1/2 medium sweet potato peeled and diced into small pieces
  • 8 pitted dates
  • 1 can coconut milk
  • 1 tablespoon maple syrup or cane sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Tiny pinch of black salt (optional)

Instructions

  • Start by washing and scrubbing the sweet potato. Dice sweet potato into small pieces
  • Place a large pot over medium heat, add almond milk, star anise, diced sweet potatoes, and dates. Bring to a boil, reduce heat to simmer for 5-7 minutes or until the sweet potatoes are tender.
  • Remove from the heat and cool slightly, discard the star anise.
  • Transfer the cooked sweet potatoes, almond milk dates, to the jug of a high-speed blender, add coconut milk, vanilla, cinnamon, nutmeg, and a pinch of black salt, and process until everything is well incorporated and you get a smooth consistency mixture.
  • Chill before serving. Pour it into serving glasses and garnish it with cinnamon. Enjoy!
