Ingredients

  • 4 slices bread (I use gluten-free bread)
  • 1 tablespoon coconut oil

Strawberry Sauce

  • 1 1/2 cup strawberries hulled and chopped
  • 2 tablespoons maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla

French Toast Batter

  • 1/2 cup almond milk
  • 1 ripe banana
  • 1 tablespoon cornstarch (non-GMO)
  • 1 teaspoon vanilla
  • Pinch of salt

Additional Toppings

  • strawberries
  • blueberries
  • fresh mint leaves to garnish

Instructions

  • First, toast bread slices and set aside.

Prepare Strawberry Sauce

  • Prepare the strawberry sauce by placing the strawberries in a saucepan, along with maple syrup, lemon juice, lemon zest, and vanilla.
  • Bring to boil over medium heat, crush some of the strawberries to thicken the sauce, then reduce to simmer for about 3 minutes. Turn off heat and set aside.

Prepare French Toast Batter

  • Blend almond milk, banana, cornstarch, vanilla, and salt, and pour the batter into a shallow dish.
  • Dip bread slices on both sides one at a time in the batter, until soaked through. Heat griddle on medium heat and brush with coconut oil.
  • Transfer each slice of bread to the griddle and cook until golden brown on each side, for about 1-2 minutes. Serve topped with a generous helping of strawberry sauce and a dollop of coconut whipped cream. Garnish with fresh strawberries, blueberries, and mint leaves for a truly gourmet experience.
