Ingredients

  • 1 1/4 cups almond milk
  • 1/2 cup agave or maple syrup
  • 1/3 cup coconut oil or vegan butter melted
  • 2 tablespoons golden flaxseeds ground
  • 1 cup cornmeal
  • 1 cup oat flour
  • 1/2 cup almond flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Instructions

  • Preheat oven 400 F. Line an 8x8 inch baking pan with parchment paper or spray with cooking spray and set aside.
  • In a medium bowl, mix together almond milk, agave, coconut oil, ground flaxseeds.
  • Mix cornmeal, oat flour, almond flour, baking powder and salt in a larger bowl. Add almond mix mixture and stir until fully combined and the batter is smooth.
  • Scoop batter into prepared pan, bake in the oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.
