Greek Salad

  • 2 cups grape or cherry tomatoes cut into halves
  • 1 long English cucumber cut into thick slices
  • 1 medium red onion cut into slices
  • 1/2 cup Kalamata olives pitted
  • 1 medium avocado pitted, peeled and chopped
  • 1/2 cup Vegan Feta Cheese cubes

Salad Dressing

  • 2 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1 teaspoon maple syrup (optional)
  • 2 cloves garlic minced
  • 2 tablespoons parsley or cilantro finely chopped
  • 2 teaspoons fresh oregano chopped
  • 1/2 teaspoon salt

Instructions

  • In a large bowl, combine cherry tomatoes, cucumbers, onions, olives, avocado, feta cheese in a bowl and toss.
  • Make the Greek salad dressing, in a small bowl combine, olive oil, lemon juice, maple syrup, garlic, parsley or cilantro, oregano, and salt. Pour dressing over salad and toss gently and serve.
