Ingredients

  • 2 teaspoons oil or 1/4 cup juice from kimchi if oil-free
  • 2 stalks green onions reserve some garnishing
  • 1 cup kimchi
  • 4 cups cooked quinoa
  • 1 teaspoon toasted sesame oil
  • 2 teaspoons Bragg's liquid aminos or salt to taste
  • 1 roasted nori sheet cut into thin strips
  • 1 avocado sliced
  • 1 cucumber cut into thin sheets

Instructions

  • Prepare quinoa, set aside, or use leftover cooked quinoa.
  • Add chopped kimchi and cook for a minute.
  • Add cooked quinoa and stir to fully combine with the kimchi.
  • Season with sesame oil, Bragg's Liquid Aminos, soy sauce, or salt to taste.
  • To serve, place kimchi fried quinoa in a bowl, arrange the nori strips, cucumber rolls, and avocado slices.
  • Garnish with green onions.
