  • 6 medium sweet potatoes peeled and cut into chunks
  • 2 tablespoons Vegan Butter ( I used Earth Balance Buttery Spread)
  • 1 tablespoon maple syrup
  • 1/4 cup coconut milk
  • 1 1/2 teaspoon salt divided
  • 1 sprig of fresh thyme for garnish

Instructions

  • In a large pot, add water. Place it on medium heat and bring it to a boil.
  • Add a teaspoon of salt and sweet potato cubes.
  • Cook the sweet potatoes for 30 minutes or until they are soft.
  • Drain the sweet potatoes and place them in a large bowl.
  • Pour in coconut milk. Add vegan butter, maple syrup and salt.
  • Using a potato masher or a form, mash the sweet potatoes until you get a smooth consistency. You can add more milk to adjust its consistency.
