  • 1 cup rolled oats
  • 1 cup all purpose gluten-free flour
  • 1/2 cup oat flour
  • 1 tablespoon ground golden flaxseeds
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/2 cup Vegan Butter softened
  • 1/2 cup organic cane sugar
  • 1/4 cup non-dairy milk almond/ oats/cashew/soy/hemp
  • 2 teaspoons vanilla extract

Instructions

  • Preheat oven 350 degrees F. Line baking sheet with parchment paper and spray with oil or use silicone baking mats.
  • Combine all-purpose flour, oat flour, ground flaxseeds, baking powder, cinnamon, cardamom, cumin, salt in a large mixing bowl, whisk together and set aside.
  • In another bowl, mix the vegan butter, cane sugar, non-dairy milk, and vanilla.
  • Mix the wet ingredients with the dry ingredients, add rolls oats and mix to combine.
  • Scoop batter using a tablespoon and drop on the prepared baking sheet about 2 inches apart, slightly flatten with fingers, repeat until dough is finished.
  • Bake for 18-22 minutes or until the edges are golden brown.
  • Allow cookies to cool slightly on a baking sheet, about 5 minutes. Transfer to a wire rack to cool completely.
