Vegan Peanut Punch

This flavorful vegan peanut punch is a popular beverage enjoyed in Jamaica and prepared throughout the Caribbean. My version of this class punch, made with peanuts, coconut milk, spices, and maple syrup, is so yummy.

Ingredients

  • 1 cup peanut shelled
  • 1/2 cup coconut milk
  • 1 cup water
  • 1 banana (preferably frozen)
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  • Add peanuts, coconut milk, and water in a high-speed blender and blend until creamy.
  • Add banana, maple syrup, vanilla, cinnamon and nutmeg.
  • Process until smooth and creamy; enjoy immediately.
