Ingredients

  • 2 cups quinoa
  • 1/2 cup vegetables broth
  • 1/2 cup Diced Onion
  • 2 garlic cloves minced
  • 1/2 cup diced bell pepper
  • 1/2 cup sliced carrots
  • 1 cup chopped kale
  • 1 tablespoon soy sauce
  • 1 teaspoon roasted sesame oil
  • Salt and pepper totaste

Instructions

  • Cook quinoa according to package instructions.
  • In a large skillet, add vegetable broth, add onions and cook until soft, about 2 minutes.
  • Stir in garlic, bell pepper, and carrots until tender. And cook for an additional minute.
  • Stir in cooked quinoa, kale, soy sauce, and sesame oil. Season with salt and pepper to taste. Serve hot.
