  • 1 medium carrot grated
  • 1/4 cup sweet pickle relish (PA's pickles)
  • 2/3 cup vegan mayonnaise (Just Mayo or Hellman's)
  • 1-2 tablespoons cane sugar
  • 1 teaspoon lemon juice
  • 1/4 teaspoon celery seeds
  • 1/2 teaspoon salt

Instructions

  • Combine all ingredients in a large bowl and mix well.
  • Cool in the refrigerator for 1 hour before serving.
