Ingredients

  • 2 tablespoons extra-virgin olive oil or avocado oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1/2 red bell pepper chopped
  • 1 medium tomato chopped
  • 1 28-ounce crushed tomatoes, or diced
  • 1 teaspoon garlic powder
  • 1 tablespoon Italian seasoning or ( or 1 teaspoon each of oregano, thyme, basil)
  • 1/4 cup fresh cilantro or parsley leaves
  • 1 teaspoon salt

Instructions

  • Heat oil in a large saucepan over medium heat, cook onion until soft, about 3 minutes
  • Add garlic, bell pepper, tomato and cook until fragrant, about 1 minute.
  • Stir in the crushed tomatoes, garlic powder, Italian seasoning, and salt
  • Cook for 10 minutes for flavors to meld. Add cilantro and stir.
