  • 1 tablespoon coconut or olive oil
  • 1 cup onion chopped
  • 2 cloves crushed garlic minced
  • 1 cup celery chopped
  • 1 teaspoon parsley flakes
  • 1 sprig thyme or 1/4 teaspoon dried thyme leaves
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon basil
  • 1/2 teaspoon smoked paprika
  • 1 bay leaf
  • 1 carrot chopped
  • 1 medium potato diced
  • 2 cups green split peas sorted and rinsed
  • 7-8 cups vegetable broth
  • 1 tablespoon nutritional yeast flakes
  • 1/4 teaspoon Cayenne pepper
  • sea salt to taste
  • sliced green onion for garnish

Instructions

  • Heat oil in a large pot over medium heat. Cook onion, garlic, and celery until onion is soft.
  • Stir in parsley, thyme, oregano, basil, smoked paprika, and bay leaf, and cook until fragrant.
  • Add carrot, potatoes, split peas, vegetable broth, nutritional yeast flakes. Cover the pot, and bring to a boil.
  • Reduce to a simmer for 45 minutes. Discard bay leaf and add salt to taste. Serve in a bowl with green onions to garnish
