Ingredients

  • 1/2 cup oat flour
  • 1/2 cup sorghum flour or brown rice flour
  • 1 tablespoon ground flax seeds
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup almond milk
  • 1-2 tablespoons maple syrup or sweetener of choice
  • 1 cup strawberries cut into slices

Instructions

  • In a large bowl, add oat flour, sorghum flour, ground flax seeds, baking powder, and salt. Mix well to combine.
  • Stir in almond and maple syrup, mix to form a smooth batter. May add a little extra non-dairy milk.
  • Heat large non-stick pan on medium-high heat, you may add a little coconut oil if you want. Add a spoonful of batter and cook for 2-3 minutes or until golden brown.
  • Add sliced strawberries, flip the pancakes, and cook for another 2-3 minutes, being careful not to burn. Repeat with the remaining batter.
