Vegan Tater Tots

Ingredients

  • 3 medium potatoes
  • 1 tablespoon onion finely minced
  • 2 teaspoon nutritional yeast flakes
  • 1/2 teaspoon salt
  • pinch of Cayenne pepper
  • 1 tablespoon olive or coconut oil

Instructions

  • Scrub potatoes and cook in boiling water until tender, about 20 minutes. When still warm, allowing to cool enough so you can handle, remove the peel and discard
  • Using a box grater, finely grate potato and place in a large bowl. Gently stir in minced onion, yeast flakes, sea salt, and cayenne pepper.
  • Preheat oven 425 F.Take a small amount, about a teaspoon and form into a cylindrical shape or a ball and place on a prepared baking sheet.
  • Brush or spray with coconut or olive oil. Bake for 30 minutes turning halfway. Delicious served with ketchup!
