Vegan Thanksgiving Sandwich

This Thanksgiving sandwich is so flavorful, with leftover tofu turkey, cranberry sauce, vegan cheese, and vegan mayo. It's a great way to use up Thanksgiving leftovers!

Ingredients

  • 2 slices bread (I used gluten-free vegan sandwich bread)
  • 1 tablespoon vegan mayonnaise
  • 1-2 slices tofu turkey
  • 1-2 slices of vegan cheese
  • 1-2 tablespoons cranberry sauce

Instructions

  • Spread 1 slice of bread with vegan mayonnaise
  • Place Tofu Turkey slices on top. Top with 1-2 slices of Vegan Cheese ( I love Daiya and Chao brand slices)
  • Place the sandwich in the toaster oven or under a broiler until the cheese melts.
  • Spread the cranberry sauce over the remaining slice of bread and place on top of the sandwich. Cut in half and serve immediately
