Ingredients

  • 1/2 cup cashews
  • 1/3 cup ketchup
  • 1/3 cup water
  • 1 tablespoons fresh lemon juice
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/3 cup sweet pickle relish
  • 2 tablespoons minced onion

Instructions

  • To make thousand Island dressing, rinse cashews and add to the high-speed blender along with water, ketchup, lemon juice, onion powder, garlic powder, and salt.
  • Process until the dressing is smooth and creamy, pausing the blender to scrape down the sides.
  • Pour salad dressing into a glass jar with a tight-fitting lid, add sweet pickle relish, onion, and stir.
  • Keep salad dressing refrigerated for about 1 week.
