Wash and boil lentils and quinoa separately.
Chop all the vegetables.
Now in a big bowl, combine quinoa, lentils, and chopped vegetables.
Prepare dressing in another bowl.
Add orange juice, lemon juice, salt, olive oil, and cilantro in a bowl and mix well.
Pour dressing over and add the remaining cilantro.
You may adjust the dressing to your taste.
