Ingredients

Warm Winter Salad ingredients

  • 1 cup lentils cooked
  • 1 cup quinoa cooked
  • 1 cup bell peppers chopped
  • 1/2 cup carrots sliced
  • 1/2 cup zucchini sliced
  • 1/2 cup Red raddishes sliced
  • 1/2 cup cucumbers chopped
  • 3 tablespoons cilantro chopped

For dressing

  • 1/2 cup orange juice
  • 1/2 cup lemon juice
  • salt to taste
  • 1 tablspoon cilantro chopped
  • 1/4 cup olive oil

Instructions

  • Wash and boil lentils and quinoa separately.
  • Chop all the vegetables.
  • Now in a big bowl, combine quinoa, lentils, and chopped vegetables.
  • Prepare dressing in another bowl.
  • Add orange juice, lemon juice, salt, olive oil, and cilantro in a bowl and mix well.
  • Pour dressing over and add the remaining cilantro.
  • You may adjust the dressing to your taste.
  • Enjoy this warm, hearty salad.
