Vegan Apple Crisp
A must try apple crisp, soft, juicy and flavorful apples with crunchy topping, no need to search for another recipe.
I decided to incorporate different varieties of apples in this crisp, from tart Granny Smith to sweet Honeycrisp apples. I added coconut palm sugar as sweetener. This sweetener is great for desserts because it doesn’t elevate the glycemic index, but you may substitute with sweetener of your choice such as maple syrup or turbinado sugar. You may also use your favorite nuts instead such as almonds or walnuts chopped or grounded in a food processor or blender. This is delicious served with vanilla ice cream or whipped cream.
Ingredients:
Filling
- 6 apples of your choice (I used Granny Smith and Honeycrisp)
- 1 tablespoon tapioca starch
- 1/4 cup coconut palm sugar
- 1/2 cup apple juice
- 1 tsp vanilla
- 1 tsp coriander
Topping:
- 3 cups quick oats
- 1 cup pecan meal
- 1/3 cup maple syrup
- 1/4 cup coconut oil
- 1/4 tsp salt
- 1/4 tsp vanilla
Directions:
Peel, core, and slice apples, place into a bowl and toss with tapioca starch, coconut palm sugar, apple juice, vanilla and coriander. Place in a greased 9 x 13 baking dish. In a separate bowl, combine oats, pecan meal, maple syrup, coconut oil, salt, and vanilla. Spread topping on top of sliced fruits. Bake in oven at 350 degrees F for 40 minutes or until topping is light brown. Enjoy!!!
