
Spinach salad is delicious, easy to fixed and its one of the most nutrient packed foods available, its high in vitamins and minerals and low in calories. Spinach contains high amounts of Vitamin A, C and K. It is also provides a good source of protein, phosphorus, zinc, selenium, omega 3 fatty acids, fiber, copper and Vitamin E. Studies have shown to prevent and fight cancer of the breast, ovaries, prostate and skin. Popeye was right….
3 cups spinach leaves
1 cup cherry tomatoes, cut into wedges
1/2 avocado, pitted and chopped
1 cup cucumber, chopped
1/4 cup onion, chopped
Sunflower Dressing
1/4 cup sunflower seeds
1 clove garlic
2 tablespoons nutritional yeast flakes
1/2 cup water
2 tablespoons lemon juice
1/4 teaspoon maple syrup
1/2 teaspoon sea salt or to taste
Wash spinach leaves, dry and tear into bite-sized pieces and place in a bowl. Toss with tomato, avocado, cucumber and onion. In a blender combine dressing ingredients and process until creamy. Pour over salad and serve.
