Spring Cleanse Salad with Quick & Easy Salad Dressing

I love to eat fresh salads especially in the warm months when the salads are fresh and bursting with flavors. In this salad, there are many different flavors to enliven your taste buds. From slightly bitter romaine, to the peppery arugula and onion and the sweet pea shoot and cherry tomatoes. When we think of spring, we think of a time to put out the old and bring in the new, we tend to spring clean our homes and also our bodies. This salad and dressing is perfect for cleansing the body and rejuvenating the immune system.


Arugula also known as rocket in many parts of the world, a member of the cruciferous vegetables such as broccoli, cauliflower and cabbage which are found to be powerful cancer fighters in many studies. Arugula contains only 5 calories per cup. It is high in fiber and great for digestive health. Arugula is rich with valuable antioxidants, considered essential in preventing free radical activity in the body. Its a good source of Vitamin A, B-complex, C and K. It contains 8 times more calcium than iceburg lettuce . Studies show that vitamin A and flavonoid compounds in arugula may help protect the body from skin cancer, oral cancer and lung cancer. Studies also showed that arugula contains anti-inflammatory compouds indole-3-carbinol and phenylethyl isothiocyanate.
Romaine lettuce is highly nutritious, it contains Vitamin A, K, C, B1, B2 , manganese, chromium, potassium, iron and phosphorous.It’s excellent for cardiovascular heart and its heart healthy. It contains potassium which lowers blood pressure.
Pea Shoots are young leaves of the pea plant, which are harvested as micro-greens after growing peas for a couple of weeks. They are packed with antioxidants, which fight free radical damage. They contain Vitamin A, C and folic acid and they are low in fat.

3 cups Romaine lettuce, rinsed and chopped
1 cup pea shoot
1 cup cherry tomatoes, halved
1/4 cup red onions, sliced

Place lettuce, pea shoot , cherry tomatoes and red onion into a bowl. Toss with lemon salad dressing and serve..

Quick & Easy Lemon Salad Dressing

1/4 cup extra-virgin olive oil
2 tablespoon lemon juice
2 cloves garlic minced
1/4 teaspoon oregano
1/4 teaspoon sea salt



In a small bowl, whisk all ingredients together or put them in a jar and shake to blend.
Use immediately or store, covered and chilled, up to 1 week.
