Ingredients

  • 1 pound potatoes scrubbed and cut in chunks
  • 1/2 medium onion chopped
  • 3 cloves garlic chopped
  • 1- 2 vegan bouillon cubes in 3 cups water or 2 3/4 cups water plus 1/4 cup coconut milk

Instructions

  • Bring water and coconut milk to a boil in a large pot over medium-high heat.
  • Add potato, onion, garlic, and vegan bouillon cubes and cook for 15-20 minutes or until tender.
  • Process soup using a handheld blender or add soup to the blender and process until smooth and creamy.
  • Divide soup into bowls, garnish with green onion, and serve.
