  • Vegan bouillon cube – I used Edward and Son’s Not Chickn Cubes. 
  • Water – I used 2 3/4 cups water plus 1/4 cup coconut milk, for a creamy and flavorful broth.

Directions

  1. Bring water and coconut milk to a boil in a large pot over medium-high heat.
  2. Add potato, onion, garlic, and vegan bouillon cubes and cook for 15-20 minutes or until tender.
  3. Process soup using a handheld blender or add soup to the blender and process until smooth and creamy.
  4. Divide soup into bowls, garnish with green onion, and serve.
