- Avocado oil – or your favorite oil, eliminate oil and saute vegetables with vegetable broth.
- Onion – white, yellow onion, or shallots are great in the recipe.

- Potatoes – i used organic red-skinned or Yukon gold potatoes.

- Italian Seasoning – Onion Powder, Garlic Powder, Smoked Paprika – this seasoning combination is flavorful.

Directions
- Over medium-high heat up the oil in a large saucepan
- Add onion and cook until soft, about 2 minutes.
- Stir in garlic, and celery and cook until fragrant, about 1 minute.
- Add cabbage, potatoes, carrots, Italian seasoning, onion powder, garlic powder, smoked paprika, bouillon cubes, and water.
- Cover the saucepan and bring it to a boil. Reduce the heat to simmer.

Extra Tips
- You can use any type of cabbage for this recipe, red cabbage works especially well and adds a nice color to the stew.

Cabbage Stew
Ingredients
- 1/2 medium cabbage chopped
- 1 tablespoon avocado oil
- 1 medium onion
- 3 cloves garlic minced
- 2 stalks celery
- 2 medium potatoes chopped
- 2 medium carrots chopped
- 1 teaspoon dried Italian seasoning
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 2 vegan bouillon cube
- 2 cups water
Instructions
- Over medium-high heat up the oil in a large saucepan
- Add onion and cook until soft, about 2 minutes.
- Stir in garlic, and celery and cook until fragrant, about 1 minute.
- Add cabbage, potatoes, carrots, Italian seasoning, onion powder, garlic powder, smoked paprika, bouillon cubes, and water.
- Cover the saucepan and bring it to a boil. Reduce the heat to simmer for about 15-20 minutes.
- Mash some of the potatoes to help to thicken the stew. Check seasoning, add salt to taste
