Ingredients

  • 1/2 medium cabbage chopped
  • 1 tablespoon avocado oil
  • 1 medium onion
  • 3 cloves garlic minced
  • 2 stalks celery
  • 2 medium potatoes chopped
  • 2 medium carrots chopped
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 2 vegan bouillon cube
  • 2 cups water

Instructions

  • Over medium-high heat up the oil in a large saucepan
  • Add onion and cook until soft, about 2 minutes.
  • Stir in garlic, and celery and cook until fragrant, about 1 minute.
  • Add cabbage, potatoes, carrots, Italian seasoning, onion powder, garlic powder, smoked paprika, bouillon cubes, and water.
  • Cover the saucepan and bring it to a boil. Reduce the heat to simmer for about 15-20 minutes.
  • Mash some of the potatoes to help to thicken the stew. Check seasoning, add salt to taste
