Over medium-high heat up the oil in a large saucepan
Add onion and cook until soft, about 2 minutes.
Stir in garlic, and celery and cook until fragrant, about 1 minute.
Add cabbage, potatoes, carrots, Italian seasoning, onion powder, garlic powder, smoked paprika, bouillon cubes, and water.
Cover the saucepan and bring it to a boil. Reduce the heat to simmer for about 15-20 minutes.
Mash some of the potatoes to help to thicken the stew. Check seasoning, add salt to taste
