White Bean Stew
Bean stews are the perfect comfort dish because they are satisfying and tasty. They are very nutritious, being high in protein, iron, fiber, and calcium. They are the ideal dish to bring along with you for a family gathering or a potluck. The taste is mind-blowing and I know it will disappear. Vegan White Bean Stew
Here is another quick and easy weeknight recipe for the entire family to enjoy, white beans cooked in a delicious sauce. Although it is humid and hot here in Florida, I still love to prepare my favorite winter stew that actually tastes amazing!
Not only is this white bean stew recipe easy to prepare, but it is also flexible and easy to adapt, since you can substitute with your own favorite vegetables. I have prepared this white bean stew recipe many times. My favorite white bean to use is cannellini bean (white kidney bean) but you can use navy, Great Northern, or butter beans.
How To Make White Bean Stew?
- Drain jackfruit, add pieces to a medium bowl, and toss with Bragg’s Liquid Aminos, paprika, garlic powder, and cornstarch.
- Heat 1 tablespoons of oil in a large non-stick skillet over medium-high heat. Add jackfruit pieces and cook on both sides until brown and crispy, about 10 minutes, turning halfway. Remove jackfruit and set aside.
- Add 1 tablespoon of oil, add onion, garlic, and celery, and cook until onion is soft, about 3 minutes.
- Stir in carrot, potato, thyme, rosemary, Creole Seasoning, Italian seasoning, nutritional yeast flakes, allspice, bay leaf, and sugar.
- Add white beans, Bragg’s Liquid Aminos, cayenne pepper, vegetable broth, and salt to taste.
- Bring white bean stew to a boil, cover and reduce heat to a simmer. Cook until potatoes are fork-tender and stew is thickened, about 15 minutes.
- Add jackfruit pieces and cook for about 3 minutes for flavors to meld. Serve immediately.
Tips For Making White Bean Stew
- I recommend that you use a non-stick pan for frying your jackfruit pieces. This will prevent them from sticking to the pan and help the jackfruit to brown nicely, with a crisp coating.
- You can also allow your jackfruit to marinate for 20 minutes for optimum flavor.

White Bean Stew

For The Jackfruit
- 1 20-ounce can young green jackfruit
- 2 tablespoons Bragg liquid aminos
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 2 tablespoon cornstarch
- oil for frying
For The Stew
- 1 tablespoon avocado oil
- 1 medium onion chopped
- 3 cloves garlic minced
- 2 stalks celery
- 1 medium carrot peeled and chopped
- 1 medium potato peeled and chopped
- 3 sprigs thyme
- 2 sprigs rosemary leaves
- 2 teaspoons Creole/Cajun Seasoning
- 1 teaspoon Italian seasoning
- 1 teaspoon nutritional yeast flakes
- 1/4 teaspoon allspice
- 1 bay leaf
- 1 teaspoon sugar (optional)
- 1 15-ounce can white beans rinsed and drained
- 3 cups vegetable broth
- salt to taste
Instructions

This stew was SO delicious – my husband said to triple the recipe next time. I didn’t have jackfruit on hand so I used heart of palm instead, and cut it into pieces. Worked out perfect.
