Vegan Baked Corn With Herb Butter

It hot here in Florida and time to prepare these incredible delicious vegan baked corn. These are no plain Jane corn, oh no! They are bursting with flavor in every bite.

Baking corn keeps them moist, they are creamy, buttery, sweet, and juicy.

This year I am growing heirloom corns and I can’t wait to harvest them. Corn is a staple for many cultures and it  is eaten daily in many countries.

Ingredients For Vegan Baked Corn With Herb Butter

  • Corn – fresh corn on the cob, I prefer heirloom corn. 
  • Vegan Butter – I used the Earth Balance brand but there are many other brands on the market. 
  • Garlic – freshly pressed or minced garlic or 1/4 teaspoon garlic powder will do. 
  • Fresh Herbs – I used basil, rosemary, and parsley. Other herbs to use are tarragon, cilantro, oregano. 
  • Nutrition Yeast Flakes – gives a cheesy flavor. 
  • Salt – I used Himalayan Pink Salt

How To Make Baked Corn With Herb Butter?

  1. Preheat oven 400 degrees F. Remove the husks and corn silk off the corn and discard. 
  2. Place corn in a baking dish or a rimmed baking sheet.
  3. In a small bowl, combine vegan butter, garlic, fresh herbs, nutritional yeast flakes, and salt. Mix until fully combined. 
  4. Spread corn with herb butter. 
  5. Bake for 35-40 minutes, turning halfway. 
  6. Toss with any leftover butter or add salt if necessary.
