Who doesn’t love the delicious flavors of French toast? When we were kids, we always liked to have French toast for breakfast. With pumpkin puree and seasonal pumpkin spice flavors, I’m elevating a classic brunch staple. It’s the perfect fall breakfast!
This pumpkin-flavored French toast recipe is simple, sweet, fragrant, and packed with pumpkin plant-based goodness. It’s amazingly tasty, healthful, and nutritious. It is golden brown and crunchy on the outside, juicy and delicate in the center, and filled with pumpkin flavor throughout!
Although it’s easy to prepare, I like to enjoy this dish on the weekends when I have more time to relax and enjoy it!

Eggs are used in most French toast recipes to cover the bread, giving it the traditional creamy inside and crunchy outside texture. You can make eggless French toast batter with warming spices, pumpkin puree, and hidden ingredient cornstarch!
When you eat these incredibly moist and delectable vegan French toast, you forget the eggs at all. Pumpkin puree works well as an egg substitute in this recipe, generating a rich, custard-like mixture to cover the thick slices of bread, just as it does in baking. It’s completely vegan, but I believe that vegans and non-vegans both will enjoy it!
How to make Vegan Pumpkin French Toast?
This vegan pumpkin French toast is much healthier and has a lot of nutritional content because I have used almond milk instead of cream, and coconut oil instead of whipped cream. Each slice provides a high source of protein, fiber, and vitamin A due to the pumpkin, flax seeds, and almond milk.
Ingredients
- 1 cup almond milk
- 1/2 cup pumpkin purée
- 1 tablespoon ground flaxseeds
- 2 tablespoons cornstarch
- 1 teaspoon ground cinnamon
- 2 tablespoons maple syrup
- 1 teaspoon vanilla
- 2 tablespoons coconut oil
- 12 slices bread
Directions
- Add almond milk, pumpkin purée, ground flaxseeds, cornstarch, cinnamon, nutmeg or cardamom, maple syrup, and vanilla to a rectangular baking dish and whisk to combine.
- Heat skillet over medium heat.
- Dip each slice in the mixture, flipping over to coat the other side.
- Add coconut oil to coat the skillet.
- Cook the French toast for about 2 or 3 minutes on each side.
Serving Suggestions
There are many ways to serve this vegan pumpkin French toast. My favorite way is with a generous sprinkle of maple syrup. You can also use Greek yogurt, sliced fresh apples, or apple crumble-cooked apples. Add coconut whipped cream and whipped cream or a sprinkle of powdered sugar for a more indulgent breakfast.
This recipe can be served as a stand-alone meal or paired with something savory for a heartier breakfast. Don’t forget to serve these Pumpkin French toast and Pumpkin Cinnamon Rolls as a side dish.
Recipe Notes
- You can use your favorite gluten-free bread for a gluten-free option. Make sure the bread is at least one day old, regardless of the type. If the bread is soft or too fresh it will turn soggy after being dipped in the batter.
- Use your favorite dairy-free milk! Coconut milk, cashew milk, oat milk, and soy milk all are excellent options.
- These French toasts can be stored for 5 to 7 days in the refrigerator or 1 month in the freezer.
- The French toast can be reheated in a variety of ways.
Method for the oven: Spread the French toast out on a cookie sheet in a single layer. Cover with foil, bake at 375°F until heated.
Microwave method: Place a wet paper towel over the French toast before placing it in the microwave. Heat it for 15 – 20 seconds at a time until it is thoroughly warmed.

Can the whole pan with the mixture and bread go in the oven?
Pris I haven’t done it baked, try baking it for 30 minutes covered at 350 F. Then uncover and bake for 10 minutes to crisp up.
