Ingredients

  • 1 cup almond milk
  • 1/2 cup pumpkin puree
  • 1 tablespoon ground flaxseeds
  • 2 tablespoons cornstarch
  • 1 teaspoon cinnamon
  • Pinch of nutmeg or cardamom
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla
  • oil for cooking
  • 12 slices bread

Instructions

  • Add almond milk, pumpkin purée, ground flaxseeds, cornstarch, cinnamon, nutmeg or cardamom, maple syrup, and vanilla to a rectangular baking dish and whisk to combine.
  • Heat skillet over medium heat.
  • Dip each slice in the mixture, flipping over to coat the other side.
  • Add coconut oil to coat the skillet.
  • Cook the French toast for about 2 or 3 minutes on each side.
