Air Fryer Zucchini Chips

These amazing Air Fryer Zucchini chips are the perfect treat, they are incredibly flavorful and addictive, the perfect way to use up summer's bounty of zucchini. They are vegan, gluten-free, low-carb, and paleo.

Ingredients

  • 2 small zucchini or 1 large
  • 1/4 cup unsweetened almond milk
  • 1/2 cup almond flour or rice flour
  • 1/4 cup nutritional yeast flakes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt or to taste

Instructions

  • Cut zucchini into thin slices, about 1/4 inch thick.
  • Toss zucchini slices with almond milk to coat.
  • In a large bowl, combine almond flour, nutritional yeast flakes, Italian seasoning, onion powder, garlic powder, and salt.
  • Brush or spray the air fryer basket with oil. Preheat the air fryer to 390 degrees. Working in batches, dip zucchini slices in the breading mixture and coat them on both sides.
  • Lay the coated zucchini slices on the basket in a single layer. Bake for 12 minutes, turning halfway, or until golden brown and crisp. Repeat until all the slices are baked.
